Directions

  1. Place Broccoli Sushi Wrap shiny side down.
  2. Lay in rice, asparagus, avocado, cucumber, mesculan, scallions, basil, mint and furikake.  
  3. Roll and cut into 8 pieces and serve with Green Goddess Dressing and soy sauce on the side for dipping.

 

Green Goddess Dressing  (yield: approx 1 cup)
Directions

  1. Combine all ingredients in a blender, mix on high until smooth. Keeps refrigerated for 3-4 days.

Main Ingredients
1 Broccoli Sushi Wrap
½ cup prepared sushi rice
.3 ounces asparagus, grilled
.3 ounces avocado cut into 4 x ¼” strips
.3 ounces cucumber cut into 4 x ¼” strips
.2 ounces mesculan
.2 ounces scallions, trimmed and split lengthwise
.1 ounce basil, julienned
.1 ounce mint, julienned
.1 ounce wasabi furikake (seaweed seasoning)

Green Goddess Dressing Ingredients
1 cup mayonnaise
1 teaspoon, crushed garlic (1 small clove)
½ ripe avocado
.5 ounces fresh parsley
.6 ounces fresh basil
.2 ounces fresh mint
.1 ounce fresh tarragon
1 Tablespoon (.5 ounces) anchovy paste
1 Tablespoon wasabi paste
1 Tablespoon lemon juice
1 teaspoon lime juice
